Carrot Ginger Gazpacho

Spring is justaround the corner, flowers are starting to pop up, I am getting a little itchyto start my garden and get my hands dirty and the sun is actually starting torise a little bit earlier. So I always start to get excited for new things inthe kitchen, lighter foods start stirring my head to start playing with.

While we were inthe South of Spain in October for one of my Pilates retreats, our onsite chefmade this amazing Carrot Ginger Soup and it was unforgettable. I know she had aton of cream in it to make it that creamy, dreamy and inspiring.

So I thought I wouldmake one that was a Spanish inspired version but I made it less of a warmingsoup and more of a gazpacho that could be eaten right from the fridge or you couldeat it warm right from the pot!

I topped with somecilantro and sliced dried chilis. I even added more heat with a couple splashesof hot sauce, but my family tends to add hot sauce to everything so we havebeen enjoying it multiple ways.

Ingredients:

  • 1 smallchopped onion
  • 3 garliccloves-smashed
  • 2 C ofchopped carrots
  • 1 ½ tspgrated ginger
  • 2 Tbspred wine
  • 1 ½ TspApple cider vingear
  • Seasalt and ground pepper
  • 2 Tbspolive oil
  • 4 Cvegetable broth
  • Pinch ofcumin seeds
  • ½ Cunsweetened coconut milk (optional)
  • 2-3Tbsp Fresh water (if you wish to thin it out)
  • Fresh ordried chilis sliced
  • Pinchof fresh Cilantro for topping
  • FavoriteHot Sauce (if you want more heat)

Directions:

  1. In a large size pot, add olive oil, onions, salt and pepper and cook until soft and fragrant. Should take about 7-8 minutes. Add in smashed garlic and carrots and cook until softened. Stir occasionally to avoid burning.
  2. Stir in ginger, red wine and broth. Let it summer until the carrots start to break down about 30 minutes.
  3. Let it cool for about 10 minutes and then transfer to a high speed blender. Blend until smooth. Add little amounts of water if you need to thin it out a little more. Taste to add flavors and salt.
  4. Add coconut milk if desired. Top with chilis, cilantro, hot sauce if you choose.
  5. Enjoy warm or cold!
