Sweet Chili & Thyme Shrimp Noodle Bowl The kids have been bugging me for Noodle bowls for weeks now and on a chilly rainy Sunday night we decided it was the perfect night to make them! We've been living in South Carolina for the last couple months and have amazing access to fresh local seafood. We literally can walk across the causeway less than a 1/2 mile to a fish market where the shrimp boats pull up to the back door.It's not going to be easy leaving here in a couple weeks, even headed back home to the Maryland coast we get great fresh seafood and we can walk up to the boats to buy also but walking in the South Carolina sunshine through your backyard to a local and fresh fish market will be greatly missed!Anyway back to eating!! Because you all need this recipe! Kids loved it so much they had seconds and were moaning in delight and asking if we could do it again the next night! LOL!  Guess this one is going on the weekly menu for the upcoming weeks. 

Here's What You Need for Your Sweet Chili & Thyme Shrimp Noodle Bowl:

Serves 2-3

Ingredients:

 

  • 1 package of Ramen noodles
  • 1/2 pound of fresh shrimp-peeled
  • 2 C of Miso broth
  • 5-6 springs of Thyme
  • 2 Tbsp sesame seed oil
  • 1/2 medium white onion
  • 1 orange pepper-chopped
  • 2 small radish-sliced
  • 2 C shredded cabbage
  • 1 C shredded carrots
  • 1/4 C sunflower sprouts
  • 1/4 C chopped green onions
  • 1/2 C steamed and shelled edamame
  • 1 Tbsp sesame seeds
  • 1/2 C of Sweet Chili Sauce
  • Tamari for extra flavoring (optional)
  • Salt
  • Pepper

 

Directions:

  1. In a medium size pan- add sesame seed oil, white onion, salt and pepper to season. Cook until fragrant.
  2. Add shrimp, remove thyme leaves from stems and sprinkle over the shrimp. Cook on medium heat until shrimp turn pink and cooked through.
  3. In a pot bring water to a bowl and cook ramen for 3-5 minutes. Don't OVER cook they'll get mushy and ruined. Drain.
  4. While the ramen and shrimp cook. Chop you veggies and place them on a plate so you can easily grab what you want for your bowl.
  5. Cook Edamame as described on the package. You can boil them really quick in a pot of boiling water also for about 5 minutes and shell them. Quick way is to buy them already shelled and warm them up before eating.
  6. In a bowl add your shrimp and sweet chili sauce. Mix in the desired amount to coat your shrimp.
  7. Warm your miso broth in a pot.
  8. Grab a bowl. Pour in your miso, add noodles, drizzle in some Tamari if desired. Top with shrimp.
  9. Place veggies around the bowl and into the middle.
  10. Sprinkle on sesame seeds.
  11. Grab chop sticks and enjoy a bowl or two!

You are seriously going to fall in love with this recipe. It seems like a lot but it's quick and easy and so delicious!
