Grilled Pineapple 3 Bean Tacos!!
Here's a healthy spin on one of everyone's favorite go to weekly dinners! I'm always looking for a new vegetarian ideas for dinner.These grilled pineapple three bean soft tacos are sure to be a hit in your house! My little ones devoured 5 a piece!We've cut out a lot more animal products in the last year. My husband and son will eat pork and chicken. But the girls and I have cut out chicken now as well. (I always say too much information is not always a good thing.) Being a health coach, growing up in the chicken metropolis of the world and also working for one of the big chicken distributors as a food broker back in my younger years has always given me a lot more insight on our food and how it is handled, raised, and processed. I've just decided it's not going to be apart of my diet. The girls see the chicken trucks hauling those poor things to plants everyday and I think they just decided to make a stand and save some chickens. (Honestly I think they both may join PETA when they're teenagers!)Here is the details for these delicious tacos!Ingredients:Serves 2-3 people
- 1/4 of a Pineapple chopped into large piece
- 1/2 red onion sliced
- 1 red and yellow pepper cut into strips
- 1 can of three beans- or 1/3 of each black, kidney, and Cannellini beans)
- handful fresh cilantro
- 1/2 Jalopeno seeded
- 1/4 C Greek Plain Yogurt
- 4-6 Corn tortillas (usually are gluten-free)
- 1/2 Tbsp olive oil for cooking
- Salt & Pepper
Directions:
- In a saute pan add olive oil on medium heat on the grill or on the stove. Place in peppers, onions and pineapple.
- Saute until vegetables and pineapple soften then add beans.
- Salt and pepper, cook for about 3 more minutes
- In a dry Pan on medium heat, heat tortillas till the get char or grill marks.
- Plate tortilla, add pineapple and vegetable mix, top with a dollop of yogurt
- Top with cilantro.
Lastly, Dig in and enjoy!!
