Roasted Chickpeas with Crispy Sage, Lemon and Manchego
The holidays are here and often it shows up on all our waistlines, grab our Roasted Chickpeas with Crispy Sage, Lemon and Manchego cheese recipe and munch on something more healthy this season! This is the perfect recipe to take with you to family Christmas dinner, an extra dish for you to have a healthy option at the holiday office party, for your girl's night out get together, or just to make for snacks or as a side dish at home. It's quick, easy and only takes about 15 minutes after a little prep. This may be your new winter go to recipe!!Here's what you need to get started!Ingredients:
- 2 Cans of chickpeas, rinsed, drained and left out to dry
- 1/4 lemon zested
- 1/2 C Manchego cheese
- Sea salt
- 1 handful fresh Sage, chopped or torn into pieces
- Olive oil
Directions:
- Place the two cans of chickpeas on a sheet pan with a layer of paper towels, after you've drained and rinsed them. Scatter them across the paper towel so they can dry out a little and allow the paper towels to absorb as much moisture as possible. I let them sit off to the side for 30 minutes to an hour. You can also do this with dehydrated chickpeas you will just have to rehydrate them which can take up to 24 hours.
- Preheat the oven for 350 degrees F
- In a cast iron skillet. Drizzle olive oil into the pan, add chickpeas, salt to flavor then sprinkle Sage over peas and mix well.
- Place in oven and cook for 10-12 minutes. Keep an eye on them so they don't dry out and stir them a couple times through out the time they're in the oven.
- While peas are roasted, zest the lemon and grate the cheese.
- Once they've cooked to your liking, pour them into a bowl. Top with zest and cheese and mix throughly.
- Serve warm and enjoy!
