Bourbon, Cherry Chocolate Bark
Bourbon, Cherry Chocolate Bark to cure it all as you frantically try to get it all done, I'm literally sitting here racing the clock to get this post ready for y'all to read, have and eat for the holidays if you need something special in the next few days to take to a party, family function or if you just need something to indulge in with huge glass of red wine along side it to keep your sanity in check.
I'm sitting here eating homemade gluten-free lasagna with a fork out of my Le Creuset baking dish, prepping to cook 120 sugar cookies with 3 small children tonight for our family Christmas party, while a puppy gnaws on my toes dangling in front of her, while my 3 pounds of bourbon chocolate bark chills in the freezer for tomorrow's cookie exchange. Did I mention I have 30 minutes left till I have to drive across town to get the first of 3 from school. (By the way, who's bright idea was it to allow kids to get out of school at 2:30 in the afternoon so close to the holidays. Mama's need every minute they can get this time of year!)
OK so here's everything you'll need to make this incredibly delicious and mind body and soul soothing chocolate bark! (Just incase you wanted one more errand to add to your list! ) :)
Ingredients:
- 2 C coconut oil-melted to liquid form
- 1/2 C sunflower butter
- 1.5 C cacao powder
- 1/4 C local honey
- 1Tbsp cinnamon
- 1 tsp cayenne powder
- t tsp pure vanilla extract
- 1 C currants
- 1 C dried cherries
- 1 C chopped hazelnuts
- 1 C good Bourbon
Directions:
- In a large bowl- add coconut oil, sunflower butter, honey, vanilla, cayenne powder, cinnamon and cacao powder. Mix well should be in liquid form but blended well
- Add bourbon, cherries, hazelnuts and currants. Mix well again
- Pour into a baking dish lined with wax paper. Level out mixture so it's even on all sides.
- Top with extra nuts or cherries.
- Put in the freezer to chill and set for an hour.
- Pull from freezer and cut into bars.
