It's been warmer here in Maryland this last week. I think everyone is happy because the negative temperatures last week were seriously putting a damper on my mood and motivation and from the sounds of it, there was a lot more people not feeling so chipper with Old Man Winter. Whether you're in a more mild climate this week or freezing in the snow this Sesame Miso Spelt Noodle Bowl is sure to be warming to the body and soul.

What Noodles to Use:

If you're having a hard time with finding Spelt noodles, healthier options aren't always the easiest to find. If you look hard in the unexpected places of the grocery stores or Walmart most times you can find some gluten-free options or check the natural aisles. But if you have a local health food store they're the perfect place to find some of these ingredients and some others healthy options you should stock your pantry with.

  • Ramen - a Japanese wheat noodle you know from the little packets.  It’s sold fresh and dried, the fresh are long and smooth, but the dried have a curly, kinky texture.
  • Soba - Thin Japanese buckwheat noodles.  Pale grey or very light brown and straight, they can be used hot or cold.
  • Udon - Japanese wheat noodles with a hearty texture, perfect for hot dishes.
  • Somen - very thin wheat noodles often used cold in the summer, and also in Vietnamese pho.
  • Rice noodles (vermicelli) ~ a translucent white, and made from rice flour, a great choice for gluten free noodle lovers
  • Spiralized veggies - Perfect for all those veggies lovers out there

Here's What You Need:

Serves 2-3:

Ingredients:

  • 1package of Spelt Udon/Soba or Ramen Noodles
  • 2-3 CMiso Broth
  • 1 ½Tbsp Toasted Sesame Oil
  • 1 tsp OrganicTamari Sauce
  • ¼ CSliced Shitake Mushrooms
  • 3Sliced Watermelon Radish-halved
  • 1/8 C Shreddedor Julienned Carrots
  • 1 TbspSliced Scallions
  • ¼Zucchini sliced thin
  • ¼Lemon sliced thin
  • ½ tspSesame Seeds
  • ½ tspKelp Flakes
  • PinchHimalayan Sea Salt

Directions:

  1. Bring water in a saucepot to a boil. Add in Spelt Noodles and cook for 5 minutes or to preferred tenderness.
  2. In a small bowl, add tamari sauce and place in Shitakes, allow them to soak in the sauce for  5-10 minutes until the soften and soak up some of the sauce.
  3. In a small saucepot add Miso Broth and heat on medium heat till it has warmed or to a simmer.
  4. Drain noodles. In a bowl add warmed broth, add a portion of the noodles. Top with mushrooms, carrots, radish, zucchini and scallions. 
  5. Top with Lemon slices, sesame seeds and Kelp flakes.
  6. Drizzle with toasted sesame seed oil and salt.
