When we were in Tuscany this fall for my hosted Pilates retreat. We were blessed to have an amazing chef that cooked, too care of our dietary restrictions, made the most amazing food, and also gave us a couple cooking lessons. We had an unforgettable and amazing time. We ate A LOT! I mean way more than normal! But we loved it all.

One of our recipes was a biscotti recipe, I stumbled across my list of recipes this weekend and thought to myself, I need to share this one! You can change it up, add orange extract and cranberries, add walnuts and dip the biscotti in chocolate. The possibilities are endless! And they're perfect for breakfast, snacks or dessert.

I changed up the recipe to make them gluten-free, cut back on the white sugar and added some spices and different flavors. This is perfect for the holiday weekend if you need a little bite for your Easter party or are looking to take something as a hostess gift if you're spending time with family.

Gluten-Free Waffles

Gluten-Free Strawberry Coconut Pancakes

Here's what you need:

Ingredients:

  • 2 C Gluten-free All Purpose Flour
  • 1/2 tsp Xantham gum (omit if it is already in your flour)
  • 3/4 C Coconut sugar
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/4 tsp of salt
  • 3 eggs
  • 3 egg yolks
  • 1 1/2 C chopped almonds
  • 1/4 tsp pure vanilla extract

Directions:

  1. Heap the flour and sugar together on a wooden board and mix well. Make a well in the middle.
  2. Add 3 yolks and 3 eggs to the well with a pinch of salt. Mix the eggs in the middle slowly adding the flour and sugar around the edges.
  3. Add the baking powder, cinnamon and continue to mix together until a dough starts to form. Then start kneading with your hands.
  4. Chop almonds finely and add to the mixture. Add flour so the dough doesn't stick to the board.
  5. Make the dough into a log shape and slice into equal pieces. Roll and flatten the pieces to form strips 3fingers wide and 1 finger high. Line an baking sheet with greaseproof paper and place the strips spaced apart in the dish.
  6. Cover the dish and leave at room temperature for 30 minutes. Brush each piece with egg and bake at 180 degree. After 30 minutes remove from the oven and slice into diagonal pieces then spread the pieces and put back in the oven for 15 minutes at 190 degrees.
  7. Cantucci means biscotti in Italian which literally means to bake twice. If you have some Vin Santo you can dip them in there or they're perfect for coffee, tea or top ice cream with!!
