Bourbon Blackberry Vanilla Pudding

It's finally spring on the East Coast, but we still get those cold, rainy and damp days that chill you to the bone. This Bourbon Vanilla Nutmeg Pudding is the perfect pick me up whether it's a summer night or you're still curled up by the fire in April.

This easy and quick recipe is great when you're home alone or perfect for when you have company. I made this without any cow's milk to make it a little healthier so it's consistency is a little more textured than what we are normally used to with that smoothness of pudding, but it tasted incredible and I was thinking the other day. I wonder if we put it through an ice cream maker how fabulous it would be!! You can also serve this warm, which is how I ate the first round! ;)

Ingredients:

  • 2 2/3 Cups of unsweetened coconut milk
  • 1 tsp vanilla paste
  • 1 vanilla bean
  • 2 large eggs
  • 2 tbsp Bourbon-I used"American Honey" Wild Turkey for a little more sweetness
  • Pinch of sea salt
  • 1 tsp ground nutmeg
  • 1/2 C pure maple syrup
  • Blackberries for garnish (you could also add some into the pudding!)

Directions:

  1. Put 2 cups of the milk in a saucepan. Scrap out the seeds of the bean into the pot and the whole vanilla bean to the milk. Heat to a simmer over medium heat.
  2. In a bowl, whisk together the maple syrup, nutmeg and salt in a medium heatproof bowl.
  3. Whisk in the remaining 2/3 cup coconut milk, and then the eggs. Once it begins to simmer, slowly add the mixtures, whisking the whole time.
  4. Return the mixture back into the saucepan, stirring constantly with the whisk.
  5. Once it comes to a simmer, cook it for another minute, continually stirring. Add in the vanilla paste and bourbon.
  6. Place the pudding in individual cups and let them cool a bit. Top with fresh berries or a little splash of bourbon!
