Fall Chili-Vegan Style!

It’s that time of year when we all start thinking about warm and comforting foods. Cooler star filled nights by the camp fire or cozy in the house as the winds blow call for only one thing. CHILI!! You have got to try this Vegan Style Fall Chili Recipe!It’s taken me years to find a vegan/vegetarian product that mimicked the texture, tasted like and cooked like ground turkey or beef. I finally found on with Beyond Meat. It’s a pea protein, it cooks and tastes just like ground meat. It’s just all about flavors and spices. My husband seemed a little skeptical looking at the package, he even asked what I was going to do with it, so I made amazing chili with it. And we ate it all between dinner that night and lunch the next day. Even the kids had 3 bowls a piece!!!

So here is everything you need to make this amazing vegan chili! It’s hearty, filling, comforting and you won’t feel guilty eating 3 bowls by yourself!

Ingredients:

  • 1 package of “Beyond Meat” pea protein
  • 1 can chickpeas -drained and rinsed 
  • 1 can red kidney beans- drained and rinsed
  • 3 carrots- chopped
  • 1 medium onion- diced
  • 1 large yellow pepper-chopped
  • 1 leek-chopped
  • 3 cloves of garlic-minced
  • 2 cans diced tomatoes
  • 1 avocado
  • Chives or scallions chopped for topping
  • 2 Tbsp olive oil
  • 1 tbsp garlic powder
  • 2 Tbsp Herbs de Provence- mixed spices oregano, rosemary, lavender, thyme, basil, fennel, lemon peel, parsley, etc)
  • 1 Tbsp sea salt
  • 2  Tbsp ground pepper
  • Cayenne pepper or hot sauce optional

Directions:

  1. In a Large cooking pot. Pour in olive oil and put on medium heat When you hear it start to sizzle. Add in garlic, carrots, leeks, onions, and peppers until they’re fragrant and soften.
  2. Add in pea protein, herbs, garlic powder, salt and pepper and cook all the way through. Make sure to keep stirring the mix so it doesn’t stick to the bottom of the pan.
  3. Add in chickpeas, kidney beans, diced tomatoes and let simmer for 30 minutes. Stirring occasionally.
  4. Slice or Dice your avocado and scallions/chives.
  5. Spoon into a bowl, top with avocado and chives.
  6. Add hot sauce or chilis or cayenne pepper if you want some heat!!
