Crispy Manchego Brussel Sprouts

It's almost here! Who's planning on being in the kitchen for the next 3 days cooking their hearts out for the big day? If you are one of those people, you need this Crispy Manchego Brussel Sprouts Recipe!!

I love this time of year! The house is a little more cozy, kids are giggling while they help chop all the veg and bake the goodies, Christmas music is in the background and I get to play with new recipes and eat more while I am cooking than I do when I finally get to the dinner table.

I know this time of year gets a little stressful and overwhelming for some people, especially if you have to do all the things on your own. Cooking for 15 people is not always the most fun! Been there, done that! That was the year I lost my mind and cooked a bunch of quail and pheasant my husband had just gotten on his hunting trip! Believe me that will never happen again!

Ingredients:

  • 1 bag of small brussel sprouts
  • 1/4 C of shredded Manchego cheese
  • Avocado oil spray (for the pan)
  • 1 Tbsp olive oil
  • Salt and pepper
  • 2 tsp garlic powder

Directions:

  1. Set oven to Bake at 425 degrees.
  2. Trim and cut brussels in halves.
  3. In a bowl toss brussels with salt, pepper, olive oil and garlic powder. Toss well.
  4. Spray pan with avocado oil and place brussels across the pan. It's better for them to cook if they're not touching so try to spread them out.
  5. Sprinkle cheese on top and bake for 16-18 minutes.
  6. Scrape all this goodness into a bowl and enjoy!
