No Bake Granola Bars
Granola bars from the grocery store can be packed with sugar and usually lots of processed ingredients, and they can be pretty expensive! These no bake granola bars are great for a mid-day snack or a little extra to add to your lunch or morning yogurt.
This easy and fast recipe is great for the kiddos too! Store them in the fridge and they'll last a few days. Change up the ingredients and make new bars each time. They're a great way to sneak in extra protein too! Need a chocolate fix? Add some cacao powder or nibs, or if you want them really sweet add some honey or chocolate chips.
Here's What You Need!
Ingredients:
- 1.5 C sliced or chopped almonds
- 1.5 C Medjool dates-pitted and chopped into small pieces
- 3/4 C Rolled Oats
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 Tbsp maple syrup
- 1/4 C unsweetened coconut
- 1 Tbsp Chai seeds
- 1/2 C dried cranberries
- 1/4 C golden raisins
- 1 Tbsp sunflower seeds
- Pinch of sea salt
Directions:
- In a dry pan on medium heat, toast almonds until they become fragrant
- In a high speed blender or food processor, mix almonds, dates, cinnamon, nutmeg, salt and maple syrup. Blend until it comes together like a pastry consistency. It will take a few minutes in the blender, add a little water (couple drops if it gets to wet and the blades stop spinning.)
- Pour mixture into a bowl and add your dried fruit, sunflower seeds, coconut and chia seeds. Mix well until evenly distributed.
- Press into a baking pan. Refrigerate at least a few hours till they firm up.
- Cut and enjoy or wrap them in parchment paper and enjoy them later.
