Summer Splendor Recipe

Summer is always amazing with all the fresh produce, local farmers markets,
stands, and even being able to grow your own food right in your back yard or
from your front porch. Summer and all it's splendor offers an easier way of
life to eating well and intuitively. Fruits and vegetables are in abundance
with many choices and every color of the rainbow.

If you're looking to start eating better, start feeling good again and
learning to really take care of yourself, body and your nutrition, summer is
the easiest and best time to jump in head first!

There's nothing better than a warm tomato from the vine, fresh cheese and
some really good olive oil from Italy. :) Put it all together and you have an
amazing lunch, afternoon pick me up or perfect addition to dinner. It's my go
to all summer long! Put it all on a bed of fresh mixed greens or arugula and
you can't go wrong!

Here is my quick and easy summer recipe that you can't live without and it's
packed with protein and Vitamin C! Did you know Vitamin C boosts collagen and also keeps you from getting sick? That will be for another post so make sure to check back for that one! IN the mean time grab the recipes!!

Ingredients:

  • Fresh local tomatoes
  • 1/2 avocado
  • small ball of burrata or fresh mozzarella
  • fresh basil
  • really good olive oil
  • balsamic glaze
  • salt and pepper

 

Directions:

  • Sliced tomatoes and avocado, place them on a place.
  • Tear mozzarella or burrata, place over tomatoes.
  • Tear basil and spread across the top. 
  • drizzle with olive oil and balsamic glaze.
  • Salt and pepper to season.
