Lemon Blueberry Hazelnut Energy Bites

Summer time! We all love it for all the fun in the sun and fresh local produce! Everything tastes so much better during the summer months. That's why you have to make these Lemon Blueberry Hazelnut Energy Bites this weekend! They have a little tart and zing with a whole lot of sweet and savory.

They are perfect for a mid-day snack, a guilt free dessert or with you coffee first thing in the morning. Store them in the freezer to make them last longer. Make a double batch if you want to share. ;) Hazelnuts are packed with protein. 1.5 cups have 30 grams! Have a sweet tooth? Use desserts like this to help with sugar cravings and start reducing processed sugar.

If you're lucky enough to live near a blueberry farm where you can pick your own or buy them from a local farms market, I promise it will make all the difference in the sweetness and how amazing the bites will taste.

Everything You Need:

Ingredients:

  • 1 lemon juiced
  • 3 Tbsp lemon zest
  • 1.5 hazelnuts-pulsed
  • 8-10 Medjool dates-pitted and soaked
  • 1/2 C fresh blueberries
  • 3 Tbsp unsweetened coconut-optional

Directions:

  1. Pulse hazelnuts till they are a course powder. Some nuts should be chopped to give it texture and to help hold the balls together. Put them in a separate bowl.
  2. Juice and zest the lemon.
  3. Pit the dates and let them soak for 5-10 minutes to soften.
  4. Pulse soaked dates, blueberries, zest and juice to make a paste-it should be sticky.
  5. Add paste with hazelnuts and mix together using a spatula or your hands. Till you get a crumble like consistency.
  6. Roll the crumble into individual balls.
  7. Roll in to unsweetened coconut is optional but it helps to keep the balls less wet and helps hold them together better.
