Cranberry Pistachio Energy Balls

Are you ready for these?? A M A Z I N G!! Cranberry Pistachio Energy Balls are sooo good! High in protein and antioxidants, these will be your go to pick me up mid day or when you get that after dinner hankering for something sweet. They have that perfect little crunch too!

When you shop make sure to get unsweetened cranberries so they're not too sweet and you get a little bit of tartness also. Simple and easy to make! Only takes about 5 minutes to do it all and you won't feel guilty if you eat just one! Store them in the refrigerator for a week if they last that long! Or they'll stay longer in the freezer and just pull one out when you're ready.

Serves 5-6

Time: 5-7 minutes

Ingredients:

  • 6-7 Medjool dates- soaked and pitted
  • ¼ C unsweetened cranberries
  • 1/8 C shelled pistachios
  • 2 Tbsp Raw Oats
  • 1 Tbsp ground Cinnamon

Directions:

  1. In a bowl soak pitted dates for 5-10 minutes.
  2. In a high speed blender mix dates until it makes a paste, use some of the water from soaking to break them down more if they’re not mixing to a paste.
  3. Add in cranberries, oats, cinnamon, pistachios and pulse.
  4. Spoon out and roll into small balls.
  5. Place in the refrigerator to let them set.
  6. Store for up to week in the fridge or a month in the freezer.
