Wild Berry Galettes
These Wild Berry Galettes are amazing! Seriously so good! This is my healthy spin on a recipe I saw in a magazine. I am not much of a baker so I was worried how this would come out, especially changing up the ingredients some so it would be a little healthier. We had to restrain ourselves from eating both that night. My husband actually ate more for breakfast the next day, "So it wouldn't go bad." :) This is a super easy recipe and you can do a shortcut and make it even easier and it's the perfect time to make these as we get into berry season! Add our Homemade Cinnamon Whipped Cream Topping if you want even more deliciousness!

Ingredients:
For the Crust: If you want to skip this step entirely you can buy frozen pre-made pastry dough and use that instead especially if you're short on time.
- 2 Cups all purpose flour
- 1 Tbsp coconut sugar
- 1 tsp salt
- 4 ounces ricotta-drain well
- 1 stick of unsalted butter
- ice water
Berry Mixture:
- 1 C strawberries
- 1 C Blueberries
- 1 C Blackberries
- 2 Tbsp lemon juice
- 3/4 C coconut sugar
- 2 Tbsp arrowroot flour
Egg wash:
- One egg
Directions:
- In a bowl add flour, salt and sugar. With 2 forks cut the butter and ricotta until you have pea size pieces. Add water as needed a little add a time until you can squeeze the mixture together in your hands. Place dough in a zip loc bag and refrigerate for 2-3 hours.
- Preheat oven to 400 degrees F.
- In a separate bowl add berries, lemon juice, sugar and arrowroot flour. Stir gently and set aside.
- Lightly dust a work surface with flour and rollout the dough into two even sized rounds. Place rounds on parchment paper on a baking sheet.
- Spoon in fruit mixture.
- Fold in edges or pinch the sides are you add in the fruit. You should see the fruit inside the pastry.
- Brush the edges with egg wash.
- Bake for 20-25 minutes until it browns on the edges and fruit is bubbling. Make sure to watch the bottoms so they don't burn.
