Buckwheat Raspberry Cacao WafflesWouldn't Buckwheat Raspberry Cacao Waffles make the perfect breakfast in bed for your favorite Mom's out there!! This Sunday is Mother's Day just incase you forgot! ;) Mother's out there have been working over time lately with all the quarantining, they're taking on more roles like full time chef, house cleaner, homeschooling teacher, giving out more hugs and love to kids that are stressed and overwhelmed. They're taking on the a lot of the burden to keep the households happy, healthy and safe. And I am not just saying that because I am a Mama to three amazing and beautiful little ones. ;)So how about this delicious recipe filled with chocolate, raspberries, they're gluten free and you can add edible roses like we did to make it extra special! I used the flour already mixed together to save some time and patience while cooking at home with 3 kids and a puppy constantly under my feet at this time. If you want to make your own gluten free flour mix feel free to go for it. There are so many options of different flours to use these days so just google it. Happy Mother's Day to all the mom's out there. I hope you get extra time to sleep in, some time for self care, time for a nap, a good meal and a great cocktail!And you could make her these too! Ingredients:

Directions:

  1. Stir egg, flour, milk, honey, olive oil until lumps disappear. Fold in cacao nibs and raspberries.
  2. Preheat waffle maker. Make sure to spray the inside before you pour in your batter.
  3. Pour into the waffle maker. Only in the middle the batter will spread out and ooze out if you use too much!
  4. Close the lid and wait about 1-1.5 minutes. Make sure it's cooked through.
  5. Lift out with a fork or small spatula.
  6. Stack up the waffles. Top with more cacao nibs, raspberries and add edible roses.
  7. Pour on the syrup for serving.
